What is the difference between organic Ceylon cinnamon and organic cassia cinnamon?
The main difference between this organic Ceylon cinnamon and cassia (Cinnamomum cassia) is the coumarin content. Cassia contains approximately 2 to 5 grams of coumarin, while Ceylon cinnamon contains only about 0.015 grams. Our organic Ceylon cinnamon is analyzed for coumarin content to ensure the highest quality cinnamon.
Genuine organic Ceylon cinnamon has a softer, slightly more complex, and milder flavor than cassia.
